Stay Slim and Have Your Delicious Chocolate Fudge Also

By Viktor Kuhle

Here is one secret to enjoying chocolate and staying healthy. I discovered this recipe from a Certified Nutrition Specialist (CNS) who wants you to enjoy your desserts. Many CNS give you foods that are boring or have such bland taste that after one serving you don't want any more. Here is a dessert that you will wish to have a second helping.

If you have a sweet tooth, you may have already searched for recipes and foods that might satisfy you. Many leave unanswered questions regarding the effect on your waistline and you have to avoid these unknown foods. Some recipes have reduced the fat but not the sugar. Some the opposite. Finding the "perfect dessert" is similar to finding the Fountain of Youth. Bending the rules allows for artificial sweeteners instead of sugar but this is not recommended.

I have found a healthful chocolate fudge recipe. It is easy to make and only takes about 5 minutes. There are no added sugars or artificial sweeteners and all the fat comes from "healthy fat" sources, not man-made polyunsaturated fats and oils.

Nutritionist Geary is the creator of this delightful dish: the chocolate-peanut butter-fudge. If the peanuts are a problem there are substitutes which are of equal value. It tastes as good as the name.

Start with getting all the ingredients on the countertop. First, a 3 to 4 ounce extra dark chocolate bar where the cocoa content is at least 70%. The higher the % the less sugar is in the bar. Take 4 to 5 Tbsp of a tasty organic nut butter. I have found many flavors work well. Try peanut butter, almond butter or cashew butter for example

Next pour 2/3 to 3/4 of a cup of organic coconut milk. This milk is a great source of healthy saturated fats. Add 3 Tbsp of rice bran and 2 Tbsp of oat bran, which provides healthy fiber. Now mix in 1/2 cup of raw pecans, almonds, or walnuts and 1 tsp of vanilla extract. If you have read some of my other articles on nutrition and reducing belly fat, you know that the nuts provide healthy fats, antioxidants, and a whole range of vitamins and minerals.

There are just a couple more ingredients to add to this masterpiece. Lets get 1/2 cup of dried cranberries or raisins and a little stevia. Stevia is a natural, non-caloric sweetener without sugar or artificial sweeteners.

You are now ready to call the dessert chef. Phone off the hook and start the flames. Start with the coconut milk, nut butter, and chocolate bar in a medium saucepan and put it on the lowest heat possible. Continuously stir as the chocolate, coconut milk, and nut butter melts together. Once these melt together add in all of the other ingredients and stir together very well.

Take the well-mixed fudge and spread it into a shallow baking dish lined with waxed paper. After licking your fingers put this lovely concoction on the eye-level shelf of the refrigerator. It has to cool and solidify before you attack it. Congratulations, your have prepared the healthiest chocolate fudge ever known to man or woman!

It may be in the back of your mind to devour this dish for dinner because I said it was so healthful. Don't. Even though this is super healthy, you must keep the portions small because this is a calorie-dense snack. It is still lower in sugar and calories than any other fudge and significantly more nutritious.
